Taylor's Vintage 2000 vanilla and oak from theTaylor's Vintage 2000 Douro, Portugal CLIMATE & TERROIR: A climate with warm summers and cold winters. The terroir has elements of slate and schist. VINIFICATION: After the intensive soaking period, the fermentation continues in progress. When approximately 8% is reached the process is stopped by addition of wine alcohol, after which the wine rests for almost 2 years wooden barrels. Further maturation takes place in the bottle.
